It was the classic “what am I going to cook for dinner?” predicament that hit me at 2 in the afternoon.
I had some chicken thawing on the counter.
I didn’t know what I wanted to make for dinner.
I searched “chicken breast pasta” and came upon this dead easy Chicken Piccata from The Pioneer Woman.
Thinly slice the breasts, dredge in flour, fry in a pan. Deglaze with wine, stock, and cream while the noodles are boiling.
Pour, garnish with parsley, serve. Sooo easy.
